Gingerbread Oatmeal Pancakes

Description: These Gingerbread Oatmeal Pancakes are semi-homemade using a shortcut which combines gingerbread cookie mix and whole grain oats.

Backstory: I had this pack of gingerbread cookie mix in the cabinet at home and with fall in the air it seems to be a good time to use it. But wait, we are on a diet and the sight of cookies will surely send my sweetie on a tangent lecturing about sweets and sticking to the plan. He won’t notice that these are relatively low in calories and sugar. No sir, a cookie is a cookie.
But guess what I’m a smart cookie 😉 So, remembering also that I had recent bought a new canister of Quaker Oats. Wanting to combine them I did a little research and here’s what I came up with. …

Ingredients:

1-1/2-cups Betty Crocker Gingerbread Cookie Mix
1/2 baking soda
1 TBS Garden Gourmet finely chopped fresh ginger
1/2-cup Quaker whole grain oats
1 tsp ground cinnamon
1/8-tsp ground nutmeg
1/2-cup Silk Unsweetened Almond Milk (regular or vanilla)
1 large egg
4oz cinnamon applesauce

optional add-ins:
Tip: I made half of the pancakes plain and then added the walnuts and craisins to the remaining batter. I think the craisins really add something to the flavor. However if someone in your household is a picky eater or on a really strict diet I might suggest also leaving the add ins to the end.

2 TBS brown sugar or molasses
1/2 cup Ocean Spray Craisins
1/2-cup walnut pieces

the method: Combine in large mixing bowl stirring in ingredients gradually until well blended. Pour canola oil or margarine in pan and heat. Using a laddle or scoop spoon the batter in to the hot pan. When the batter forms bubbles flip it. Cooking on both sides until golden brown.

Note: I used a large square griddle pan that left grill marks on the pancakes. Next time I would suggest using a large round flat pan.

Well despite the name there are no noodles; trying to keep the starchy carbs to a minimum. 
Anyway, it’s not hard to make and I made it using  healthier ingredients such as  low sodium Worcestershire sauce, fresh mushrooms, onions, & parsley and fat free ricotta, prosciutto, panko bread crumbs crunchy onions, egg whites, and reduced fat shredded Sargento 4 cheese.  All layered into a delish dish for brunch. 

The only thing I would do different next time is add a few slices of fresh tomato or eggplant.  I will definitely be making this again.

Super Bowl Weekend

It’s Super Bowl weekend.  Let the games begin.  The office betting pools have long been established.  The ticket scalpers are scalping away.  The media has  begun hyping up the Super Bowl ads and the Half Time Show.  Football fans and foodies alike cheer on their favorite game day dishes from nachos and pizza and beer to the perfect wing receipe.   Casual attire at many urban locals have changed from typical  t-shirts and jeans to jeans and jerseys.  That last minute search for the perfect, rediculously oversized flat screen.  All the traditions are in place along with a few modern twists.  All in the spirit of this American tradition.

Admittedly, I am no football guru but still I can’t help but think this should’ve played out a little differently.  I can’t help but feel like I am having dejavu… haven’t we seen these two teams battle on the gridiron recently?  Lacking a little enthusiasm with this line up, here are some alternate endings I would have liked to see if only the play offs would’ve gone a bit differently…

Giants vs. the Saints – A Family Dynasty:  This game would’ve read like a family tree meets a who’s who of the NFL.  Giants’ QB Eli Manning playing on big brother Payton Manning’s Indy terf against his  father famed football legend Archie Manning’s former team the New Orleans Saints.  Yet against the epic Saints QB Dree Brees I’m not sure who would make papa Manning prouder?  His flesh and blood or his black and gold blood…lol by that I mean the spirit  of comaraderie and allegence.

Giants vs Denver – Show Stoppers!  I can’t get enough of Jimmy Fallon’s skit.  Really I can’t stop watching Jimmy Fallon’s recreation of David Bowie as Tim Tobow meeting God.   “Tebowie” acted out to the tune of Space Oddity is hilarious.   Come on everybody’s still talking about Tebow so you know you’d tune in to more of his antics on the field and paired that with the amazing Victor Cruz’s sideline salsa and who needs a halftime  show.  We are already throughly entertained.  Not to mention people rapping about Jason Pierre-Paul and the “big blue d”.  

Most of the original skit has been removed or disabled on Youtube the original costume and makeup really made it.

So I overheard some people talking about this music program called Spotify, I’m not sure if I caught all the details but enough that I was curious. I found this video which I though gave me a better understanding than Spotify’s own video. And I am thinking about trying it, but I have been let down by itunes and disappointed by Pandora.
One day after an update, itunes randomly deleted about 80% of my library and to make matters worse my back up extenal harddrive 1TB has been uslesss for months on account of a broken internal part at the connection where the usb plugs into it . so I shy away from digital music for awhile. Keeping it old school. Sometimes it just feels safer to have a hard copy – a disc of your music *gasp* I know to the younger generation who practically grew up on ipods i must sound like a dinosaur, but a cd will be there long after your itunes auto deletes files and your computer crashes and all else fails you just pop in the disc … but I digress.
Eventually, I discovered Pandora which I have been using for over a year now. I like that Pandora is trainable to your music preferences, but what I didn’t understand ,…as I have a very diverse taste in music and I tried to create several different stations. Not only are the ads a bit annoying as everybody knows, but also since then I have found the preferences you set are across the board and not station specific. Meaning if I check that I like a Led Zepplin song under my classic rock station it might later play under a different station because I liked it.  I actually created a Halloween Station last year and recently put it on hoping to hear “Monster Mash” or something of the sort; instead I heard “Dyer Maker”. Don’t get me wrong I like both songs but they are worlds apart and not what I expected on that particular station. THis is annoying to me because sometimes you want to create separate channels for a reason.
Anyway so here we are now, interested in what Spotify may have to offer. And I would like to hear your thoughts.
Have you tried Spotify? Did you love it or hate it? Any pros & cons that stand out for you?
Anyone else have issues with itunes or pandora?
Is there another program out there that you think is superior to all of these and why?
Please comment on whatever speaks to you here just generally interested in what others experiences have been with Spotify and these other well known programs.
